Honestly, the best air fryer fries I've ever had were at a food truck in Portland

Tbh, I watched the guy make them and he soaked the cut potatoes in cold water for a full hour before cooking. They came out so crispy without being dry. Has anyone else tried this soaking trick with different veggies?

Nah, I gotta disagree on the hour long soak. That's way too much time for something as simple as fries. I just rinse my cut potatoes under cold water for a few minutes, pat them super dry, and they crisp up perfect. An hour seems like overkill when you get the same result by getting rid of the surface starch and making sure they're not wet.

Your "same result" thing is exactly why I rush through cooking and end up with worse food lol.

Yeah, that rush to finish is a real trap. Victor_robinson has a point about the quick rinse, but my impatient version usually means soggy fries. Guess some of us are just wired to choose speed over quality sometimes.
