What's your secret for getting it that crispy?

Press it between paper towels first to get all the water out, then toss it in cornstarch before it goes in the basket. That cornstarch trick is what @lilya76 means about the game changer texture. I do mine at 400 for about 15 minutes, shaking it halfway through.
