My coworker says the air fryer makes leftovers better than fresh food and I can't tell if he's right
We were eating lunch in the break room in Denver last week and he pulled out a container of day old pizza that he crisped up in his air fryer and he swore it tasted better than when it came out of the oven the night before. I tried it and honestly it was pretty good, the crust got this crunch back that it never has fresh out of a box, but part of me thinks we're just convincing ourselves because it's easier than reheating in a pan. Is there a food that actually gets better in the air fryer or are we all just lying to ourselves?
Read something a while back where a food scientist talked about this exact thing, and it comes down to moisture. When you reheat pizza in a microwave, the crust steams itself soft from the inside, but an air fryer blasts hot dry air around it so the outside dries out and crisps back up while the middle stays warm. That's a real physical change, not just your brain playing tricks on you. Same deal with fried chicken, egg rolls, and french fries, they all get that soggy thing going in a microwave but come back to life in the air fryer. So your coworker isn't totally wrong, though "better than fresh" is a stretch, it's more like "about as good as fresh again" for certain foods. Try it with leftover wings sometime and you'll see what I mean.
