My neighbor told me I was overcooking vegetables in the air fryer
She said 375 for 8 minutes was way too long for broccoli. Tried 350 for 5 minutes instead and they came out perfect with that nice char without being mushy. Anybody else get called out by a friend for their cooking times?

Did you try different temps for the florets vs the stems too? I feel like I always get either dry tops or raw stalks unless I break them into really tiny pieces or just toss the stems entirely. Was wondering if your neighbor had any advice on that or just the general cook time.

Oh man, I actually wonder if the issue is more about how you prep them before cooking rather than the temp split. In my experience, scoring the stems with a shallow crosshatch helps them cook way more evenly with the florets, lets that heat penetrate faster. Might be worth a shot before you go hacking everything into tiny bits, your mileage may vary though.

Oh man, I gotta push back on that a little. I actually think scoring the stems is more trouble than it's worth for the average home cook. My neighbor tried that once and ended up with mushy florets and still crunchy stems, so it's not a magic fix. I've had way better luck just halving the stems lengthwise when they're thick, keeps them from lagging behind without turning the tops to dust. As for the temp split, I've messed with 400 for the florets and a separate batch for stems at 375, but honestly that's too much juggling for broccoli. I just roast everything at 425 and pull the stems out a few minutes early if they seem done, saves on dirty dishes.
