My sister swore by soaking potato wedges in salt water for 30 minutes before air frying

She told me it draws out the starch and makes them crispier. I tried it last night with some russets from Aldi and they came out way better than my usual straight-from-the-bag method. Has anyone else done this or is she just messing with me?

Thirty minutes is overkill for me. Soaked some Yukon Golds for ten minutes once and they were noticeably better though. @knight.dylan your sister might be onto something with the cold water trick but I think the time matters less than just doing it at all.

Honestly, my sister told me the same thing about fries once and I thought she was just being extra. Ngl, I tried it with a whole batch of frozen crinkle cuts once - complete accident, forgot them in the sink while watching a game - and they were actually way less soggy. Tbh, I've never gone back to just tossing them straight in the air fryer. So your sister might be onto something, or maybe she just likes messing with you like mine does.
