Shoutout to the recipe that taught me chicken thighs need 10 extra minutes in the air fryer
I was making my usual crispy chicken thighs last Tuesday, following a recipe from some random blog. The instructions said 20 minutes at 375, but after 20 minutes I pulled them out and they were still pink inside. I was about to toss them back in for another 5 when I noticed a note at the bottom of the page that said "all air fryers run hot, add 10 minutes for dark meat." I had been undercooking my chicken for like 4 months without realizing it. Now I always add 10 minutes and let them rest for 5 before cutting. Has anyone else found a cooking time that just never worked with your specific fryer model?

Maybe your thermometer needs recalibrating instead of trusting random blog notes.

Fair point about the blogs but some recipe notes are from actual home cooks who test stuff.
