Tried to make air fryer sweet potato fries for my kid's school lunch and had to pick between crispy or healthy.

I had to choose between coating them in a little oil for crunch or just using a dry spice rub to cut calories. I went with the dry rub, and they came out a bit tough and chewy, not the crispy treat I promised. Anyone have a trick to get them crispy without drowning them in oil?

I used to be totally on the dry rub train too, thinking ANY oil was basically a crime. But then I finally tried the cornstarch trick with just a HALF teaspoon of oil and it was a game changer. My kid actually ate the whole batch and asked for more, and I felt less guilty because it's not like they were soaked. The cornstarch gives that crunch without needing a ton of oil, really helps the spice stick too. So now I do a tiny bit of oil mixed with cornstarch and whatever seasoning, and they come out perfect every time. It's a small compromise that makes everyone happy.

Yeah I used to see it that way too. But after seeing how my sister's kids act when they get a good mix of both, it changed my mind. What do you think works best?
