Took me 4 years to admit my chili recipe was just tomato soup with beans

I spent forever tweaking my chili, adding more cumin and smoked paprika, convinced it was award-worthy. Then my buddy from Texas finally tried it and asked why it tasted like watery pasta sauce. Turns out I was never browning the meat properly or reducing the liquid. Has anyone else had a cooking blind spot that took way too long to figure out?

Did you find that once you nailed the browning, the rest kinda fell into place? For me it was realizing I was adding all my spices at the wrong time, dumping them in at the start so they burned instead of blooming in the hot fat. Once I waited until the meat was browned and then stirred the spices in for just a minute, the flavor went from flat to actually deep and rich.

Man I used to be Team "dump everything in at once" for YEARS. But after burning a batch of garam masala so bad it tasted like dirt I finally tried blooming my spices in the rendered fat after browning. Night and day difference, your friend is absolutely right.

Did your friend ever taste the chili I tried to make from a recipe I found online? I swear it had like 15 ingredients and I thought I was a genius. My buddy tried it and just stared at me, then said it tasted like hospital food. Turns out I was using way too much liquid smoke and not draining the canned beans. He had to teach me the whole process from scratch, like showing me how to actually brown the meat until it gets that crusty stuff on the bottom of the pot. That was the real game changer, not all those extra spices I was piling on.
