A customer told me my sourdough was "too dense" and I was mad until I actually weighed my flour

My buddy laughed at the idea of weighing flour for years. He'd just scoop it out of the bag with a measuring cup and pack it down with the back of a knife. One day he brought a loaf to a potluck and someone asked if it was a doorstop. He finally caved and bought a scale after that. Now he weighs everything down to the salt and his bread actually rises. He still gets mad about it though, says the scale is "judging his life choices.

You'd be surprised how many people don't actually weigh their flour. I used to scoop with a measuring cup until I saw a video where a guy showed the difference between a packed cup and a fluffed cup. Could be as much as 50 grams difference in the same "cup." That's a lot for a sourdough recipe that's already finicky. Now I weigh everything even water and it changed my bread completely. No more guessing if that 3rd cup was too heavy.

My buddy refused to weigh flour for a year and his loaves came out like hockey pucks every time.
