Am I the only one who just found out cold butter was ruining my pie crust
I've been making pies for 3 years and always thought the dough was supposed to feel soft and easy to work with. Last Saturday my neighbor Deb in Toledo watched me cube butter straight from the fridge and said the chunks need to stay the size of peas when you cut them in, not smear into the flour. Tried it her way the next morning and the crust actually flaked instead of tasting like a cracker. Do you all cut the butter by hand or use a food processor for this?
