Found out last week that a real bakery in my town of 3,200 sells bread by weight in grams, not by the loaf
I always priced by the loaf until a customer at the farmers market in Elkhart asked what my 2 pound loaf actually weighed on a scale, and it was 1.6 pounds. Do you all scale your dough balls to the gram or just eyeball it?
Scaling to the gram is the way, unless you enjoy playing bread roulette with your customers. That 1.6 pound "2 pound" loaf is exactly why people start bringing their own scales to the market, and honestly I do not blame them one bit. I weigh every single dough ball now because I got tired of the math not working out in my favor at the register. Eyeballing it works great right up until it does not, and then suddenly you are the baker who shorted somebody. Weigh your dough, save your name, it is that simple.
