I hit 500 sourdough loaves baked in my home kitchen last week and it blew my mind.

I started keeping track during lockdown back in 2020, just for fun. Last week I hit loaf number 500 and it made me realize how far I've come from that first pancake-like disaster in my oven. The big moment was when a neighbor in Portland offered me $15 for a loaf and I finally felt like a real baker, not just a hobbyist. Has anyone else hit a number like that and felt weirdly proud of it?

Totally get the pride, that's a wild milestone! But man, I see it different @paul_taylor21. Keeping a big starter in the fridge a whole week just kills its vibe for me. Feeding it daily and watching it bubble is half the fun, you know?

Been scaling my starter down for single loaves too, works great.
