I used to weigh every gram of flour, now I scoop with a coffee mug and my bread got BETTER
Five years ago I had a $22 kitchen scale and a laminated chart taped to the cabinet, and I would tare and re-tare like my life depended on it. Then my scale died on a Saturday morning with a batch half mixed, and I just used the mug from my cold coffee and eyeballed it. The loaf came out with a better crumb than anything I had baked in weeks. Now I go by feel and the dough tells me when it is ready, which sounds like nonsense but it works in my kitchen. Has anyone else ditched the scale after years of swearing by it, or am I setting myself up for a disaster batch?
