Just realized proofing baskets aren't just for fancy bakers

I used to think bannetons were a waste of money. Stuck with metal bowls and tea towels for 2 years. Then I borrowed a friend's 8-inch round basket last month and tried it with my sourdough. The crust came out way more even and the loaf held its shape better. Has anyone else noticed a big difference after switching to proofing baskets?

My roommate Sara swore by her banneton for months. Finally borrowed it last weekend and my dough actually held its shape instead of turning into a sad pancake. Huge difference, honestly.

Bannetons are basically magic for not ending up with a flat loaf.

Saw a blog post that broke down the science behind it. The basket lets the dough breathe while keeping its shape, so you get that nice even crust instead of a soggy bottom. Plus the spiral pattern gives it that bakery look without having to score it perfectly. Made a huge difference for my loaves too.
