Noticed my sourdough starter got way more active after I stopped rinsing my jar with hot water

Hot water kills some of the wild yeast, your mileage may vary.

Oh man, that reminds me of the time I tried making kombucha with water that was way too hot. I think I boiled the starter tea and just poured it straight into the jar without waiting. Killed everything off, and the whole thing turned into a weird moldy mess in my pantry. Took me a week to figure out what went wrong, and I had to toss the whole batch. Now I always let the water cool down to room temp before adding anything with yeast.
