Old baker told me I was overworking my dough for croissants

He said I was developing too much gluten before the lamination and that's why my layers were tearing, has anyone else had a mentor call out a bad habit you didn't even notice?

Used to think kitchen tools had strict rules, but stories like this show the real skill is in making do with what you have. A wrench flipping pancakes means that person knows how to work with their hands and adapt, which is a better skill than owning fancy spatulas. Never would have considered a wrench useful near food before, doesn't that kind of resourcefulness change how you see everyday tools?
