Rant: Why didn't anyone tell me about salt in bread dough?

Been baking for 3 years and skipped salt the whole time. Thought it was optional. Made a loaf for a friend last week and she asked if my bread was "flat tasting." Ordered a kitchen scale that same night. Anybody else skip a basic ingredient for way too long?

Three years and nobody said anything?" That's wild but I get it. Did you ever notice how flat your dough felt when you handled it? I'm asking because I made the opposite mistake - I doubled the salt once by accident and the yeast barely did anything. The whole loaf came out like a brick. Curious what finally made you think "maybe I should add that white stuff in the recipe.
