Switched from metal to glass bowls for whipping cream and it set faster

I tried it on a whim last Sunday after my metal bowl was dirty and the cream went from liquid to stiff peaks in maybe 45 seconds less than usual. Has anyone else noticed a big difference with bowl material or is my thermometer just off?

Bet your thermometer is fine. Metal transfers heat so well that it actually warms the cream up from your hands and the room more than glass does. Cold is your friend when whipping cream, so glass holding that chill longer makes sense.

Respectfully, I've gotta push back a little on that. From what I've seen, stainless steel actually chills down way faster than glass once you stick it in the freezer, and that initial cold transfer to the cream matters more than a slow cooldown over time.

Oh yeah, totally agree... I swapped to glass bowls and it made a huge difference for me.
