Unpopular opinion: fresh yeast is not worth the hassle for home bakers

I spent three weekends trying to get fresh yeast bread to rise right. The first batch, the water was too hot and killed it. Second time, I used too cold milk and it took four hours to barely double. Third try with a cheap thermometer finally worked, but the extra 45 minutes of shopping and storage hassle just was not worth it for bread that tasted the same as my usual dry yeast loaves. Anyone else ditch fresh yeast after giving it a fair shot?

Oh great, so now I gotta treat my bread starter better than I treat myself? Great life advice... Honestly @jennifer833 you nailed it with that high-maintenance dating analogy. I had one batch that took so long to rise I actually forgot about it and went to bed. Woke up at 3am to a dough volcano on my counter. Fresh yeast is like that friend who swears they're "low maintenance" but then needs a specific room temperature and organic sugar and constant attention. Meanwhile my instant yeast just chills in the pantry for six months and never complains. Pass.

Honestly, after reading your post I feel like you just described my entire relationship with fresh yeast. I mean, it's like dating someone high-maintenance who doesn't even look that good at the end of the day. You put in all this effort, cry over the water temperature, find a special spot in the fridge for it, and then the bread comes out exactly the same as if you just sprinkled some dry stuff from a jar. Totally not worth the extra grocery runs and the panic when you realize you forgot to feed your pet yeast blob. I'd rather just use my instant yeast and spend that saved time staring at my phone while the dough rises.
