Wednesday was my worst baking day in 5 years, and it all went wrong because I forgot to check my starter before mixing the dough at 6 AM.

I had 12 loaves proofing by 8 and then realized the starter was totally dead, so I had to toss the whole batch, start from scratch, and ended up working until 11 PM to get the orders out for a big catering job I had Thursday morning. Has anyone else had a day where a simple miss like that just snowballed into a disaster?

Starting from scratch at 8 AM and working til 11 PM after tossing 12 loaves? That's brutal. I would have been so frustrated seeing that perfect proofing schedule completely blown up by one dead starter. Sounds like you handled it way better than I would have, I'd probably have just ordered pizza and cried.
