Dropped $40 on a silicone baking mat set from a Facebook ad, and my cookies slid right off the tray
I bought a 3 pack of silicone mats from a Facebook ad last month for $40 because the video showed cookies sliding off clean with zero sticking. The mats were so slick that my chocolate chip cookies spread into one giant thin sheet and slid off the edge into the oven bottom, which took an hour to clean. Has anyone found a mat brand that actually grips dough, or should I just go back to parchment paper?
My silicone mats do the same thing with chocolate chip cookies but they work great for stuff like sugar cookies or shortbread that hold their shape. The trick for me was chilling the dough first and putting the tray in the fridge for like 15 minutes before baking, that stopped the spread for the most part. But honestly for $40 you could've bought a lot of parchment, and parchment still gives you that little bit of grip that silicone just doesn't have. Your mileage may vary though, some people swear by the name brand mats.
