Had to pick between a stand mixer or a hand mixer for my first sourdough attempt. Went with the hand mixer because it was cheaper. Dough was a sticky mess for 45 minutes.

Used to think a hand mixer was fine for bread dough until I tried making a stiff bagel dough. The motor started smelling like hot plastic and the dough just climbed the beaters. Now I see why people swear by a stand mixer's power for anything thicker than cake batter.

Ever try mixing by hand? Sounds like a workout but at least your dough won't fight the beaters.

Totally get what @the_claire means. You really need that stand mixer's power to handle thick dough without burning out the motor.
