I dropped $70 on a jar of vanilla paste that went bad before I used half of it

Bought a 4oz jar of Nielsen-Massey vanilla paste at a kitchen store in Nashville back in October, thinking I would use it in everything. Turns out I bake maybe twice a month, and that jar has a shelf life that does not care about my good plans. Found it last week looking like tar and had to pitch it, so that is roughly $35 down the drain. Maybe it is just me, but does anyone actually go through a whole jar before it turns?
