I just found out parchment paper has a right and wrong side and I have been using it wrong for 10 years
Saw it on a King Arthur blog post last month. Apparently the silicone coating is only on one side and using the wrong side messes with browning. Tried flipping it for cookies yesterday and they came out way more even. Has anyone else noticed a difference or am I just late to this?

King Arthur actually had a whole testing thing about this. I spent an hour reading it instead of doing laundry. My experience is the wrong side makes cookies spread weird and get dark on the bottom while staying pale on top. I threw out a whole batch of snickerdoodles because of it and just thought I lost my touch. Now I check the roll every time like a crazy person holding it up to the light to see the shiny side.

Different side doesn't make that much of a difference for most people though. Oven temp and rack position matter way more than which way the parchment paper is facing. You're overthinking this one.
