I used to think sifting flour was a waste of time until I made 3 batches of hockey puck cookies in a row

Kept skipping it because I'm lazy but my cookies came out dense and flat every time. After sifting just once for a birthday batch last week they actually puffed up nice and soft. Has anyone else noticed a huge difference from something so simple?

Sifting never did much for my cookies, always came out fine without it.

My friend Jenna once brought over these chocolate chip cookies she was so proud of, spent like 2 hours on them. They came out super flat and tough, like crackers almost. Turns out she skipped the sifting because her grandma never did it and her cookies were always great. She finally sifted the flour for her next batch and they puffed up way nicer, so idk maybe it depends on the recipe.

Oh man, that's such a rough feeling when you spend forever on something and it just doesn't turn out right. I've definitely been there with baking fails and it's just the worst. It's crazy how much of a difference sifting can make though, right? I used to skip it all the time because I was lazy and never noticed a problem, but then I tried a recipe that specifically said not to skip it and the texture was totally different. So maybe it really does depend on the recipe and the type of flour you're using. I'm glad your friend figured it out for her cookies, that must have been so satisfying when they finally came out right.
