My neighbor's flat cookies made me see one baking mistake clearly
She brought over a batch of chocolate chip cookies that spread into thin, crisp sheets. I asked about her butter, and she said she melted it because it was too hard to cream. That's the exact problem. Melted butter makes cookies spread too much before they set. I told her to just let the butter sit out for an hour next time. Has anyone else fixed a friend's baking by spotting a simple step like this?
