Old way: Sifting flour every time. New way: Never sifting unless a recipe demands it. Which side are you on?
I used to sift flour for every single cake I baked because "that's what you do." Then about 6 months ago I forgot to sift for a chocolate cake and it came out just as fluffy. Now I only sift if the recipe specifically says to, like for angel food cake where it actually matters. How many of you still sift every time and why?

Had a buddy who sifted for years until his cat jumped in the bowl and he never bothered again.

Used to think gold panning was a fun hobby but honestly, a cat jumping in the bowl would probably make me quit too. That's just TOO much of a mess to deal with.
