Wasted $60 on a fancy silicone baking mat that just made things worse
I finally gave in and bought one of those expensive silicone baking mats everyone raves about, thinking it would be a game changer for my cookies. After three batches where the bottoms came out way too dark and the edges wouldn't crisp up, I went back to my old $5 roll of parchment paper. The silicone mat just trapped too much heat or something, I don't know. Has anyone else had that problem or did I just get a bad one?

Way too dark bottoms and edges wouldn't crisp" - that's exactly what happened to me with the expensive silicone mat I bought last year. You're not alone in this, I swear those things are a scam for cookies. I think they basically steam the bottom of the cookies because the silicone doesn't let heat escape like parchment does. Plus the silicone holds heat way too long so your cookies keep cooking after you pull them out. I threw mine in the trash after ruining a batch of chocolate chip cookies for a party. Parchment paper forever, cheap and works perfectly every time.

@jasonallen convinced me I was wrong. I used to love mine but now I’m back to parchment too.
