Wait, is this actually a real thing that happened or are we just supposed to be mad about it? A pitmaster saying your ribs are "too clean" sounds like he's just messing with you or making a weird joke. Half the stuff people post about BBQ gatekeeping feels made up for internet points anyway. If someone really told you that, who cares, eat your ribs however you like them.
