Caught a pitmaster at a competition in Kansas City doing something weird with his fire management
I was down at the American Royal last weekend walking through the vendor area and saw this older guy from a team called Smoke Ring Syndicate. He had this offset smoker setup different from anyone else there. Instead of stacking logs like a fence he was placing each one in a specific spot almost like a puzzle. I watched him for 20 minutes and he never added more than two pieces at a time. Talked to him after and he said he's been running that same method for 12 years based on how air flows around the grates instead of building a big fire bed. He claimed it holds temps within 5 degrees for hours without touching it. Has anyone else seen guys doing fire layouts that specific or is this just a competition thing?

Bet he's using the bark to control airflow, not just the wood.

Within a five degree window" - man, I can barely get my smoker to hold within a twenty degree range most days. I'd need a computer and a whole lab setup just to try that bark trick. My stuff's so all over the place I'd probably overshoot and end up with charcoal before I even got the temp dialed in.
