Changed my mind about wrapping brisket after watching a Franklin video
Honestly, I always thought wrapping in butcher paper was just hype, but then I saw Aaron Franklin explain how it keeps the bark from getting soggy while still pushing through the stall. Tried it on my last brisket cook last Saturday and the bark came out perfect. Has anyone else had good luck with the paper wrap?

Paper wrap is the real deal. Tried it because I was tired of mushy bark and never looked back. Franklin knows his stuff.

Get home from work and see my husband watching that same video. I've been wrapping my roasts in foil for thirty years and never questioned it. Tried the paper method on a pork shoulder last week and the difference was noticeable. It got me thinking about how we just do things the same way out of habit, not because we've tested if there's a better way. Like how I used to always buy the same brand of peanut butter until someone showed me the store brand was just as good for half the price. Sometimes the simplest change makes the biggest difference.

@the_jake totally nailed it with that paper trick. Same thing happened to me with brown sugar - always grabbed the name brand until a buddy made me do a blind taste test and I couldn't tell the difference.
