Found out Aaron Franklin only uses Post Oak for brisket 100% of the time

I always figured he mixed woods depending on the cook. Read it in his new book last night. Anyone else thought he switched it up sometimes?

Wait has anyone checked if Aaron Franklin's water source changes the smoke absorption on the post oak? I live in Austin and our tap water is crazy different from town to town. Hard water with minerals could mess with how wood chars and releases flavor. Maybe he sticks to one wood because his specific water chemistry makes blending woods pointless. Would explain why his bark sets so clean every time. Someone with city water in Dallas or Houston might get different results trying his exact method.
