Man I was dead wrong about those ceramic briquettes for my Weber kettle
I rolled my eyes when my buddy in Memphis swore by them back in 2018, figured it was just another gimmick to sell me stuff. After 3 racks of ribs came out way more even than my usual lump charcoal setup, I had to admit the heat distribution was legit better. Anybody else get humbled by a bbq gadget they thought was nonsense at first?

Three racks of ribs is hardly a controlled test, I'll stick with my plain old lump.

Back when I used to comp brisket for competitions I'd have agreed with you. But last summer I ran 8 racks side by side and the stuff from Cowboy was noticeably less clean burn.

Yeah, "noticeably less clean burn" is exactly what I kept seeing too. I did a similar thing last fall with like 10 bags of different brands and the Cowboy had this weird smell almost, like something chemical in the smoke.
