My brisket probe hit 205 degrees exactly at the 14 hour mark, which never happens for me.
I was so shocked I yelled 'no way' and scared my neighbor's dog, so what's the weirdest coincidence you've had on a cook?

Honestly, a brisket hitting temp right on schedule is just a brisket behaving for once. The real shocker would be if your neighbor's dog started barking back the exact time to check your next one. Weirdest thing I ever had was a steak that cooked perfectly during a total power outage, just sat there in the cooling oven. Made me question my whole understanding of heat.

The whole thing about letting meat just sit there and keep cooking itself... @sage_green that pork shoulder story reminds me of how my old truck would keep running for five minutes after I turned the key off. Like the engine had its own inertia or something. It's wild how many things in life keep going on their own momentum even when you think they've stopped. Meat's the same way, I guess. Heat just keeps moving through it long after the stove's off. Makes you wonder what else we're rushing for no reason.

Used to think cooking was all about constant heat, but @sandraf98 your power outage steak story actually makes sense now. Had a pork shoulder finish perfect while I was fixing a leaky roof, just sat wrapped in towels for hours. Realized sometimes the meat just keeps cooking itself if you don't rush it.
