Started resting my brisket overnight after a pitmaster tip.

The improvement in bark and moisture is unbelievable.

Wait, you really want me to admit how long I left it? Tbh, I set a timer for two hours but got distracted by my dog. Ended up being more like three, and the bark was almost too good to eat. Ngl, it was kinda perfect, but my family thought I was crazy for babysitting a piece of meat that long. Honestly, if you have the patience, it's worth every minute, but don't blame me if you start talking to your smoker. Next time I'm just gonna trust the process and not overthink it.
