Started resting my brisket overnight after a pitmaster tip.
The improvement in bark and moisture is unbelievable.

Oh that tip about the bark and moisture... glad it worked out for you. I tried a rest like that once and it really does make a difference. How long did you let it go for?

Wait, you really want me to admit how long I left it? Tbh, I set a timer for two hours but got distracted by my dog. Ended up being more like three, and the bark was almost too good to eat. Ngl, it was kinda perfect, but my family thought I was crazy for babysitting a piece of meat that long. Honestly, if you have the patience, it's worth every minute, but don't blame me if you start talking to your smoker. Next time I'm just gonna trust the process and not overthink it.

I let a brisket rest in a cooler for four hours once, wrapped in towels. It was honestly the juiciest one I've ever made, even if my buddy said I was treating it like a newborn.
