Stopped at a roadside stand outside Lockhart and the pitmaster there was 19 years old
Drove through central Texas two weeks ago and pulled off for gas, ended up talking to this kid running a smoker behind his uncle's place. He was 19 and had been on the pit since he was 13, and he was cooking on a 40 year old offset his grandpa welded out of a propane tank. What got me was when he flipped the brisket and just poked the flat with his finger instead of using a thermometer. Said his grandpa never owned one and they never ruined a brisket either. I watched him pull it at what had to be around 200 degrees internal and it was the best flat I have had in years, no wrap, just butcher paper at the stall. Made me think about how much gear I have bought in the last five years that never made my food any better. Anybody else run into old school cooks who just know by feel and somehow nail it every time?
