The day my offset smoker turned into a fire hazard at 6am

I fired up my Oklahoma Joe at 5:45 to get a brisket going for a family get together. By 7am the grease fire was shooting out the side vents, melted the thermometer probe wire, and nearly set my deck on fire in Nashville. I thought I had cleaned it good after the last cook but the baffle plate was caked. Two neighbors came running with fire extinguishers. Someone tell me they check their drip pan every single time, or am I the only careless one here?
