TIL wiping my brisket rub off after 40 minutes made a way better bark
I was cooking two 12 lb packers on my offset in the backyard last Saturday and on a whim I scraped most of the coarse salt and pepper off one of them about 40 minutes after rubbing. That one came off the smoker with a dark, tight bark that stuck to the meat, while the fully rubbed one had a soft, steamy crust that slid right off when I sliced it. Has anyone else messed with pulling back the rub partway through, or did I just get lucky with the fire that day?
