My uncle's advice about salt timing ruined my chili for 10 years

My uncle Ray always told me to add salt at the very end of cooking chili so it doesn't get tough. I followed that rule for a decade. Last month I forgot and added salt with the onions at the start by accident. That batch of chili was the best I ever made. The beans were tender and the meat had way more flavor. I looked it up and apparently salting early helps break down proteins and brings out taste. Has anyone else had a cooking rule from a relative that turned out to be totally backwards?

Wait, did your uncle swear by that too? lol. My buddy Mark used to sear his steaks on low heat cause his grandma said high heat dries them out. Turned out she had a bad stove, he missed out on good crusts for years.

Man, that grandma stove theory is wild. How long did Mark hold onto that before he figured it out? I bet he looked back at all those sad, gray steaks and wanted to cry. Did he ever try to convert other people to the low heat method before he saw the light? That whole family loyalty thing with cooking advice can really mess you up for years.
