Question about using a $15 thrift store knife vs my fancy $80 chef's knife for a month straight

After 30 days of chopping everything with that beat-up old Victorinox I found at Goodwill in Denver, I honestly can't tell if my expensive one was ever actually sharper or if I just thought it was because I paid more for it, has anyone else done a dumb experiment like this?

Oh man, I did this exact same thing with a $5 plastic-handled Chefmate from the dollar store against my Shun. LOL. Its honestly kind of humbling when you realize sharpening skills matter way more than the price tag. My cheapo knife actually held an edge pretty decent after I learned basic honing. The real joke is I spent way too many years being scared to mess up "the good knife" so I barely used it. Now I just use whatever I can keep sharp and my fancy one sits in the drawer looking pretty most of the time. Might need to go hit up Goodwill myself and save some money for other stuff haha.

@sandra_bennett59 That dollar store knife trick is solid. Ive sharpened enough beaters to know a good edge is all in the wrist, not the wallet. Sparing the fancy blade is just wasted potential.
