Wasted $300 on pre-mixed mortar that went bad before I used it all

Bought three bags of that pre-mixed stuff from the hardware store last month, figured it would save time on a retaining wall job, but by the time I opened the third bag a week later it was hard as a rock. Anyone else had that happen or do I just store it wrong?

Wait, is this really some big secret that needs a contractor's hot take? @max_torres44, I feel like keeping stuff from melting in a hot garage is common sense, not some trade trick. Unless we're talking about like, paint or caulk that actually goes bad in the heat, I'm not sure it's that deep. I've left a half-used tube of caulk in my trunk for a whole summer and it was fine, so maybe I'm just lucky.
