Found a way to stretch one roast chicken into 4 meals last week

I bought a $6 rotisserie chicken and turned it into chicken salad, enchiladas, soup, and then broth from the bones. Has anyone else tried this kind of meal prep with a single bird?

Four meals? Man, I can barely stretch one chicken past a single dinner without my wife giving me that look like I'm trying to feed us sawdust.

Get you. My wife's the same way. She'll peek in the kitchen and I'm already mentally planning how to stretch what's left into soup or sandwiches the next day.
