I used to meal prep every Sunday like a maniac, now I just cook double dinner portions and call it done
After my third kid came along 2 years ago, I realized spending 4 hours on Sunday chopping veggies for the week was just not happening anymore, so I started making extra pasta or chili at dinner and packing the leftovers for lunch. Anyone else ditch the whole Sunday prep ritual for something simpler?

@ruby_henderson36 yeah but honestly my chili and pasta taste way better the next day after the flavors meld together. I started doing the same thing after my second kid and honestly my freezer is my best friend now.

My buddy tried the Sunday prep thing for about a month. He spent 5 hours making these fancy mason jar salads and roasted veggies. By Wednesday everything was soggy and gross, now he just makes extra taco meat on Tuesday and calls it a win.

I read a food blogger who said the whole meal prep trend came from influencers with too much time on their hands and normal people just cook extra dinner. She said meal prep burnout is real and doubling dinner is way more sustainable in the long run. Do you find your leftovers hold up better than the prepped stuff ever did?
