My brother in law said he makes a full pot of soup for under $8
We were talking last Sunday and he told me his trick is to buy a whole chicken on sale at the Food Lion near him, roast it for dinner one night, then use the bones and leftover meat for soup. He said he gets at least three meals for two people out of it. I always thought soup was cheap but never broke down the cost like that. Has anyone else tried this kind of meal stretching with a whole chicken?

That "roast it for dinner one night" step is the real key. You get that first nice meal, then the soup feels like a bonus. I do the same thing but sometimes use an instant pot to make the broth faster after.

Yeah the instant pot move is smart for broth. @wadew51, how long do you pressure cook the bones after roasting? I tried 90 minutes once and it was good, but then did 45 minutes another time and it felt weak. Also, do you add any veggies to the pot with the bones, or just keep it plain for the stock? Trying to figure out the best balance for flavor without making it muddy.

It's a lot of work for a few bowls of soup though. Roasting a whole chicken takes over an hour, then you have to pick the bones and make stock. The time spent might not be worth the eight bucks saved for everyone.
