My neighbor swore by bulk buying dried beans
Old guy next door said stop buying canned beans. Told me a 10 pound bag of pintos costs $8 at the local market. I tried it last month. Soaked and cooked a batch in the pressure cooker. Way better texture and I saved like $40 compared to cans. Anyone else give up canned beans yet?

Is saving $40 on beans really that big of a deal? I mean they're just beans. Soaking them overnight sounds like more trouble than it's worth for a side dish.

Wait wait wait, hold up. $8 for a ten pound bag of pintos? That can't be right, I'm paying almost double that at my grocery store for a five pound bag. You sure your neighbor isn't shopping at some secret underground bean warehouse or something? Anyway yeah, I switched over a few months back and honestly the texture difference alone is worth it. Canned beans always feel a little mushy and weird to me now. I will say though, you gotta remember to soak them the night before or you're screwed if you're trying to throw dinner together last minute.

Mark from three blocks down had the same problem, @mark436. I checked around and the local Latin grocery has them for $7.99. Regular chain stores are way more. But here's the thing about your overnight soak comment - I actually tried skipping it once because I was in a hurry and used the quick soak method (boil for 2 minutes, then let sit for an hour). The texture was definitely different, not as creamy but still way better than canned. My main question is how long did it take you to figure out the right water ratio for the pressure cooker? I still end up with either too much liquid or they come out dry and splitting open. Also, for people like betty_kelly who think the savings aren't worth it, I get the time thing but $40 is like two takeout dinners in my book. That adds up quick over a year if you eat beans regularly.

Huh, I've been messing around with pressure cooker beans too and still can't nail the water ratio consistently. Did you ever try adding a splash of oil or vinegar to the soak @mark436, heard that helps keep the skins from splitting? I get that canned beans are convenient but the texture on dried ones is just way better once you get past the learning curve.
