My neighbor taught me to freeze leftover tomato paste in ice cube trays

I was at her house last month helping with some yard work. She saw me toss a half-used can of tomato paste. She grabbed it out of the trash. Said I was throwing away money. She showed me her freezer with about 20 cubes of different pastes and sauces. Each cube is about a tablespoon. Saves her at least $5 a month on ingredients that would go bad otherwise. Good idea or does the taste get weird after a while?

Actually, the taste does stay fine for a good while if you do it right. I've been freezing tomato paste cubes for years and they hold up for about 3 to 4 months before you notice any difference. Just make sure to pop them out of the tray and into a freezer bag fast so they don't get freezer burn.

Oh man, you think you're bad with tomato paste? I once found a can in the back of my fridge that had grown its own little ecosystem. Could've charged rent. But seriously, your neighbor is onto something good. The flavor stays fine for a few months as long as you wrap the cubes tight. Air is the enemy in a freezer, so toss 'em in a ziploc bag. I do this with pesto and chipotle peppers too. Saves my hide when a recipe calls for one tablespoon and I can grab a cube instead of staring at a half-empty jar for weeks.

Did you try freezing it flat in a bag so you can break off pieces?
