Rant: I tried making my own veggie broth from scraps versus buying the boxed stuff for my weekly soup
After three weeks of saving onion skins, carrot ends, and celery leaves in a freezer bag, I boiled them for an hour and got a gallon of broth that cost basically nothing, while the store-bought carton was $3.50 and tasted weaker, so what other kitchen scraps are you guys using to save cash?

Try roasting the scraps first. Spread your onion skins and carrot ends on a baking sheet and give them a good char in the oven. That deep, smoky flavor you get is a game changer for chili or bean soups. It turns what could be a thin broth into something with real backbone. I even toss in the papery garlic skins for a more complex taste.
