Saw a guy at the grocery store in Boise buy 10 pounds of chicken leg quarters for $7. What do you do with that much chicken?

Dude, that's a steal! I'd make a huge batch of chicken stock first, then freeze the rest. You can roast a bunch for easy meals all week, or shred it for tacos and casseroles.

Totally agree with the pressure cooker idea! You could even do a big batch of chicken tinga or a creamy curry right in the pot. Having all that cooked, shredded meat ready to go in freezer bags is a total game changer for busy nights.

Wasn't there a whole thing about how cheap cuts like that are perfect for pressure cookers? I read an article a while back about how a pressure cooker can make that kind of chicken fall-off-the-bone tender in no time. You could cook it all at once, then pick the meat for soups or chicken salad. The bones and skin left over would still be great for making a rich broth later. That much chicken is a project, but it feels smart to have a plan before it all goes in the freezer.
