Warning: Everyone in my building keeps throwing out their chicken bones after making stock
I saw three neighbors toss the bones last week, but you can simmer them a second time for a weaker but still useful broth. It saved me buying stock for a week of rice and beans. Do you guys get another boil out of your bones or is that just me?

My buddy Dave swears by a second boil. He'll throw the bones back in with some onion skins and carrot ends, gets a light broth perfect for cooking grains. He made a pot of lentils with it last month that he wouldn't stop talking about.

linda114 bringing up waste is fair, but I think "a lot" is a bit much. Chicken bones aren't exactly the biggest environmental crisis we're facing, and a single simmer gets plenty of flavor out of them. If someone wants to stop at one boil, I don't see the harm in that.

My dog loves the second-simmer bones after they cool down. It's like a bonus treat and keeps him busy.
