Tried using Danish oil on a walnut table top and waited 3 days for it to cure - still tacky as heck

Three days is barely long enough for Danish oil to dry.

Depends on the climate. Wipe on, wipe off, do it right.

Consider @alexbennett's point about temperature - heat speeds up curing way more than people realize.
